Collagen Low Carb Bites


1 cup desiccated coconut

1/4 cup pumpkin seeds

¼ cup broken walnuts

50ml salted butter

2 tbsp boiled water

¼ cup coconut cream

2 Tbsp of erythritol

1 scoop of O Nutricia collagen

Step by Step Instructions

Step 1
Heat non-stick pan on high heat. Slightly toast the seeds, nuts and coconut flakes, till golden brown.
Step 2
In a medium pan, melt the butter and erythritol. Add the water, collagen and coconut cream. Allow the sauce to form bubbles and thicken.
Step 3
Add the seed mixture to the sauce and mix well. Scoop into a truffle mould. Allow to cool and set for 2 – 3 hours or overnight.
